Chewy, gooey, melty and wildly addictive Salted Caramel Chocolate Chip Cookie Bars.

Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/4 cups brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 1 1/4 cups thick caramel sauce (or soft caramel candies melted with 2 tbsp cream)
  • Flaky sea salt, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper and lightly grease.
  2. In a large bowl, whisk melted butter, brown sugar, and white sugar until smooth. Add eggs and vanilla. Mix until well combined.
  3. Stir in flour, baking soda, and salt until a soft dough forms. Fold in chocolate chips.
  4. Press half the dough into the bottom of the prepared pan. Spread caramel sauce evenly over the dough, leaving a small border around the edges.
  5. Drop spoonfuls of remaining dough over the caramel and gently spread to cover. It’s okay if some caramel peeks through.
  6. Bake for 28–32 minutes, until golden and set. Cool completely before slicing. Sprinkle with flaky sea salt just before serving.

Notes

  • Chill before slicing for neater bars
  • Use dark chocolate chips for a richer flavor
  • Can be frozen for up to 2 months in an airtight container
