  • 4 oz (115 g) dark chocolate, chopped
  • 2 large eggs + 2 egg yolks
  • ⅓ cup brown sugar
  • ¼ cup all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • For the Butterscotch Center:
  • ¼ cup butter
  • ¼ cup brown sugar
  • 3 tablespoons heavy cream
  • ¼ teaspoon sea salt
  • ½ teaspoon vanilla
  • Toppings: Chopped pistachios, Flaky sea salt, Extra butterscotch drizzle (optional)

Instructions

  1. MAKE THE BUTTERSCOTCH CORE: In a saucepan, melt butter and brown sugar over medium heat. Add cream, sea salt, and vanilla — stir until smooth and glossy. Cool slightly, then pour into small molds or ice cube trays. Freeze for at least 1 hour until solid.
  2. PREP THE FONDANT BATTER: Preheat oven to 400°F (200°C). Grease 4 small ramekins and dust lightly with cocoa powder. Melt butter and chocolate together (double boiler or microwave). Whisk eggs, yolks, and brown sugar until pale and thick. Fold in melted chocolate, flour, salt, and vanilla until silky.
  3. ASSEMBLE THE MAGIC: Pour batter halfway into each ramekin. Place a frozen butterscotch core in the center, then cover with remaining batter. Smooth the tops.
  4. BAKE & SERVE: Bake for 11–13 minutes until edges are set but centers are soft. Cool for 2 minutes, then invert onto plates. Top with pistachios, flaky sea salt, and a drizzle of warm butterscotch.

Notes

  • Don’t overbake — the molten center is what makes it magical!
  • You can freeze unbaked fondants and bake directly from frozen (add 1–2 minutes).
  • For a nut-free twist, top with caramel shards or chocolate curls.
