1 lb Brussels sprouts, halved
1 cup baby carrots, halved lengthwise
1/2 cup green beans, trimmed
1/3 cup dried cranberries
1/3 cup chopped walnuts (toasted)
2 tbsp olive oil
1 tbsp balsamic glaze
1 tbsp maple syrup
1/2 tsp garlic powder
Salt & black pepper to taste
Instructions
Preheat oven to 400°F (200°C). Toss Brussels sprouts, carrots, and green beans with olive oil, garlic powder, salt, and pepper. Roast for 20–25 minutes until golden and crispy.
Toast walnuts in a dry skillet until golden.
Combine roasted veggies with cranberries and toasted walnuts in a large bowl.
Drizzle with maple syrup and balsamic glaze. Toss gently to coat.
