ROASTED BUTTERED ONIONS WITH THYME & PEPPER

Delicious roasted onions bathed in butter, seasoned with thyme and pepper, perfect as a cozy side dish.

Ingredients

  • 4 large yellow or white onions, peeled and halved
  • 4 tbsp unsalted butter, cut into cubes
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tbsp balsamic vinegar (optional for a sweet kick)
  • Fresh thyme sprigs

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Arrange the onion halves cut-side up in the dish. Drizzle with olive oil, then sprinkle salt, pepper, and garlic powder evenly over them.
  3. Top each onion half with a cube of butter and a few thyme leaves. Optionally, drizzle lightly with balsamic vinegar.
  4. Roast uncovered for 40–45 minutes or until golden and tender, basting once or twice with pan juices.
  5. Garnish with extra thyme and serve hot as a side dish or appetizer.

Notes

  • Use sweet onions for more depth and natural sugars.
  • Don’t skip the butter — it helps caramelize the layers beautifully.
  • For a vegan version, swap butter with plant-based margarine.
  • Great make-ahead option; reheat at 350°F for 10 minutes before serving.
