Ingredients

  • 34 lb beef roast
  • 2 tbsp olive oil
  • 1 tbsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Fresh thyme/rosemary
  • 2 tbsp oil or butter
  • 2 cups sliced mushrooms
  • 2 garlic cloves
  • 2 tbsp flour
  • 2 cups beef broth
  • 1/2 tsp pepper
  • Salt
  • 1 tsp fresh thyme

Instructions

  1. Rub roast with oil and seasonings. Sear all sides.
  2. Bake at 375°F (190°C) for 50–60 minutes. Rest for 10–15 minutes.
  3. Sauté mushrooms, add garlic. Add flour, then broth. Simmer until thick.
  4. Slice beef thickly and cover with mushroom gravy.
