3/4 cup all-purpose flour
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
4 eggs
3/4 cup sugar
1/4 cup oil
1 tsp vanilla
1 tsp white vinegar
1 tbsp red gel coloring
Powdered sugar (for rolling)
1 cup cream cheese
1/4 cup butter
1 cup powdered sugar
1 tsp vanilla (for filling)
1 1/2 cups whipped cream
Fresh strawberries
Red velvet crumbs
Instructions
Preheat oven to 350°F. Line 10×15 pan with parchment. Beat eggs and sugar 5 mins until thick. Mix in oil, vanilla, vinegar, and coloring. Fold in dry ingredients.
Spread in pan and bake 10–12 mins. Roll warm cake in a towel dusted with powdered sugar. Cool completely.
Beat filling until smooth. Unroll cake, spread filling, re-roll tightly.
Top with whipped cream, strawberries, and cake crumbs. Chill 1 hour before slicing.
Notes
Don’t overbake the cake — it should be flexible.
Use gel coloring for rich color.
Dusting with cocoa powder or drizzling with melted chocolate is a great dressing idea.
