  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 eggs
  • 3/4 cup sugar
  • 1/4 cup oil
  • 1 tsp vanilla
  • 1 tsp white vinegar
  • 1 tbsp red gel coloring
  • Powdered sugar (for rolling)
  • 1 cup cream cheese
  • 1/4 cup butter
  • 1 cup powdered sugar
  • 1 tsp vanilla (for filling)
  • 1 1/2 cups whipped cream
  • Fresh strawberries
  • Red velvet crumbs

Instructions

  1. Preheat oven to 350°F. Line 10×15 pan with parchment. Beat eggs and sugar 5 mins until thick. Mix in oil, vanilla, vinegar, and coloring. Fold in dry ingredients.
  2. Spread in pan and bake 10–12 mins. Roll warm cake in a towel dusted with powdered sugar. Cool completely.
  3. Beat filling until smooth. Unroll cake, spread filling, re-roll tightly.
  4. Top with whipped cream, strawberries, and cake crumbs. Chill 1 hour before slicing.

Notes

  • Don’t overbake the cake — it should be flexible.
  • Use gel coloring for rich color.
  • Dusting with cocoa powder or drizzling with melted chocolate is a great dressing idea.
