Soft, sweet red velvet crinkle cookies made with cake mix for an easy dessert.

  • 1 box red velvet cake mix (15.25 oz)
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Mix the red velvet cake mix, eggs, oil, and vanilla extract in a bowl until a thick dough forms.
  2. Chill the dough in the fridge for at least 30 minutes.
  3. Scoop tablespoon-sized dough balls and roll them in powdered sugar.
  4. Place on a parchment-lined baking sheet and bake at 350°F (175°C) for 10–12 minutes.
  5. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
