For the Dough:

  • 2 1/4 cups all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 2 1/4 tsp instant yeast (1 packet)
  • 1/2 tsp salt
  • 1/2 cup milk (warmed)
  • 1/4 cup unsalted butter (melted)
  • 1 large egg
  • 1 tbsp red food coloring

For the Filling:

  • 1/4 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 2 tbsp granulated sugar
  • 1 tbsp ground cinnamon

For the Cream Cheese Glaze:

  • 4 oz 115g cream cheese, softened
  • 2 tbsp unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk (for desired consistency)

Instructions

1️⃣ Make the Dough:

  1. In a large mixing bowl, whisk together flour, cocoa powder, sugar, yeast, and salt. Add the warmed milk, melted butter, egg, and red food coloring. Mix until a dough forms. Knead for 6–8 minutes until smooth and elastic. Cover and let rise in a warm place for 1 hour or until doubled in size.

2️⃣ Prepare the Filling:

  1. In a small bowl, mix brown sugar, granulated sugar, and cinnamon. Set aside.

3️⃣ Roll Out the Dough:

  1. On a floured surface, roll out the dough into a 10×14-inch rectangle. Spread softened butter over the dough. Sprinkle the cinnamon-sugar mixture evenly over the butter.

4️⃣ Roll and Cut:

  1. Starting from the long side, tightly roll up the dough. Cut into 8–10 equal rolls and place in a greased baking pan. Cover and let rise for 30 minutes.

5️⃣ Bake:

  1. Preheat the oven to 350°F (175°C). Bake the rolls for 18–20 minutes until slightly golden and cooked through.

6️⃣ Make the Cream Cheese Glaze:

  1. Whisk together cream cheese, butter, powdered sugar, vanilla, and milk until smooth and creamy.

7️⃣ Glaze and Serve:

  1. Drizzle the warm rolls with the cream cheese glaze. Serve immediately and enjoy the decadence!
