  • 2 zucchini, thinly sliced
  • 2 yellow squash, thinly sliced
  • 4 large tomatoes, thinly sliced
  • 1 large onion, thinly sliced
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 cup tomato sauce
  • 1 tablespoon olive oil (for sauce)
  • 2 garlic cloves, minced (for sauce)
  • 1/2 teaspoon oregano (for sauce)
  • 1/2 teaspoon basil (for sauce)

Instructions

  1. Preheat the oven to 190°C (375°F). Mix the tomato sauce, olive oil, garlic, oregano, and basil. Spread the mixture evenly across the bottom of a baking dish.
  2. Alternate slices of eggplant, zucchini, yellow squash, tomato, and onion. Arrange them vertically in rows across the baking dish until the dish is completely filled.
  3. Combine olive oil, garlic, thyme, oregano, paprika, salt, and pepper. Drizzle evenly over the vegetables.
  4. Cover with foil and bake for 35 minutes. Remove the foil and bake for an additional 20 minutes until the vegetables are tender and lightly caramelized.
  5. Sprinkle with fresh parsley before serving. Serve warm as a main dish or flavorful side.
