A refreshing and elegant dessert made with layers of flaky pastry, creamy vanilla custard, and fresh raspberries.

Ingredients

  • 1 sheet puff pastry or sponge cake layers
  • 2 cups milk
  • 3 egg yolks
  • 1/3 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1 cup whipped cream or topping
  • 1/2 cup fresh raspberries
  • Powdered sugar (for dusting)
  • Fresh mint leaves (for garnish)

Instructions

  1. If using puff pastry: bake according to package directions and cool. If using cake: slice into even layers.
  2. For custard: Heat 1 1/2 cups milk in a saucepan until steaming.
  3. In a bowl, whisk egg yolks, sugar, cornstarch, flour, and remaining 1/2 cup milk until smooth.
  4. Slowly whisk hot milk into egg mixture, then return to pan. Cook over low heat, whisking until thickened.
  5. Remove from heat, stir in butter and vanilla. Let cool completely, then chill.
  6. Layer pastry or cake, custard, whipped cream, and raspberries. Repeat if layering again.
  7. Dust top with powdered sugar, garnish with raspberries and mint. Chill 1 hour before serving.

Notes

  • Let the custard chill completely for firm, clean layers.
  • Swap raspberries with strawberries, mango, or kiwi.
  • Store refrigerated and consume within 2 days for best texture.
