A delicious raspberry pistachio layer cake that is light, creamy, and elegantly fruity.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1/2 cup finely ground pistachios
  • 1 1/2 cups fresh raspberries
  • 1/4 cup sugar (for raspberry filling)
  • 1 tablespoon lemon juice
  • 1 1/2 cups heavy whipping cream
  • 1 cup mascarpone cheese (or cream cheese)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • Fresh raspberries (for topping)
  • Chopped pistachios (for topping)
  • Light dusting of cocoa powder (optional)

Instructions

  1. Preheat oven to 175°C / 350°F. Grease and line two 8-inch cake pans.
  2. Whisk flour, baking powder, and salt. In another bowl, beat butter and sugar until light and fluffy.
  3. Add eggs one at a time, then vanilla. Alternate adding dry ingredients and milk. Fold in ground pistachios.
  4. Divide batter evenly between pans and bake 25–30 minutes until a toothpick comes out clean. Cool completely.
  5. For raspberry filling: Simmer raspberries, sugar, and lemon juice 5–7 minutes until thickened. Cool fully.
  6. Beat cream until soft peaks form. In another bowl mix mascarpone, powdered sugar, and vanilla. Gently fold whipped cream into mascarpone mixture.
  7. Assemble: Place first cake layer on a plate. Spread cream filling, spoon raspberry mixture over, sprinkle chopped pistachios.
  8. Add second layer and frost top and sides. Decorate with raspberries, pistachios, and a light cocoa dusting. Chill 1 hour before slicing.
