3 fresh peaches, sliced
1½ cups fresh raspberries (or frozen, thawed)
½ cup granulated sugar
¼ cup brown sugar
1 tsp vanilla extract
1 tbsp lemon juice
2 tsp cornstarch
1 cup all-purpose flour
1 tbsp baking powder
¼ tsp salt
1 stick (½ cup) cold unsalted butter, cubed
½ cup heavy cream (or milk)
Optional: vanilla ice cream & extra raspberries for topping
Instructions
In a bowl, toss peaches and raspberries with both sugars, lemon juice, cornstarch, and vanilla.
Mix flour, baking powder, and salt. Cut in cold butter with a pastry cutter or fork until crumbly. Stir in cream to form a thick, rustic dough.
Pour the fruit mixture into a greased baking dish. Dollop spoonfuls of the cobbler dough right over the top.
Bake at 375°F (190°C) for 35–40 minutes, or until topping is golden and fruit is bubbling.
Let it cool slightly. Serve warm with scoops of vanilla ice cream and fresh raspberries on top.
Notes
For a richer flavor, use ripe peaches.
Frozen raspberries can be used if fresh ones are not available.
