- 150g graham crumbs
- 50g sugar
- 75g melted butter
- Raspberry Compote:
- 180g raspberries
- 25g sugar
- 5ml lemon juice
- Cheesecake Layer:
- 450g cream cheese
- 60g powdered sugar
- 5ml vanilla
- 240ml whipped cream
- Jelly Layer:
- 240ml raspberry juice
- 20–30g sugar
- 5ml lemon juice
- 1 tbsp gelatin + 45ml water
- Topping:
- Fresh raspberries
- Whipped cream
- Chocolate curls
- Mix graham crumbs, sugar, and butter. Press into pan. Chill 15 minutes.
- Cook raspberries, sugar, and lemon until thick. Cool and spread over crust.
- Beat cream cheese, sugar, and vanilla. Fold in whipped cream. Spread over compote. Chill 1 hour.
- Bloom gelatin. Heat juice with sugar and lemon. Melt gelatin in. Cool slightly. Pour gently over cheesecake. Chill 4 hours or overnight.
- Garnish with raspberries, whipped cream, and curls.
