A delightful raspberry cream stuffed bundt cake that is soft, buttery, and drizzled with sweet berry sauce, perfect for any occasion.

Ingredients

  • For the vanilla cake:
    • 2 ¾ cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 1 ¾ cups granulated sugar
    • 4 large eggs
    • 1 tablespoon vanilla extract
    • 1 cup whole milk
  • For the cream filling:
    • 8 oz cream cheese, softened
    • 1/3 cup powdered sugar
    • 1 teaspoon vanilla
    • 1/2 cup heavy cream (whipped to soft peaks)
  • For the raspberry swirl:
    • 1 ½ cups fresh or frozen raspberries
    • 1/3 cup sugar
    • 1 tablespoon lemon juice
    • 1 teaspoon cornstarch + 1 tablespoon water
  • For topping:
    • 1 cup powdered sugar + 2 tablespoons milk (glaze)
    • 1 cup raspberry sauce (from above)
    • Fresh raspberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a bundt pan thoroughly.
  2. In a saucepan, cook raspberries, sugar, and lemon juice until broken down. Add cornstarch slurry and simmer until thick. Cool completely.
  3. Whisk flour, baking powder, and salt.
  4. Beat butter and sugar until light and fluffy (4–5 minutes).
  5. Add eggs one at a time, mixing well. Stir in vanilla.
  6. Alternate adding dry ingredients and milk until smooth.
  7. Pour half the batter into the bundt pan.
  8. Spread cream cheese mixture evenly over batter. Spoon some cooled raspberry sauce on top.
  9. Add remaining batter and gently swirl with a knife.
  10. Bake 50–60 minutes until golden and set. Cool fully before removing from pan.
  11. Drizzle simple glaze over cake.
  12. Spoon extra raspberry sauce over top and garnish with fresh raspberries.
