Raspberry Cheesecake Bars are a delicious and easy-to-make dessert with a graham cracker crust, creamy cheesecake filling, and a sweet raspberry swirl.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup brown sugar
  • 16 oz cream cheese (softened)
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups fresh or frozen raspberries
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water
  • Crumb topping (mix 1/4 cup flour, 2 tbsp sugar, and 2 tbsp butter)
  • Fresh raspberries for garnish

Instructions

  1. Mix graham cracker crumbs, melted butter, and brown sugar. Press into a parchment-lined 9×9” pan and bake at 325°F for 10 minutes.
  2. Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream, and mix until creamy. Pour over the crust.
  3. In a saucepan, cook raspberries, sugar, lemon juice, and cornstarch slurry until thick and jammy. Swirl gently into cheesecake layer using a spoon or knife.
  4. Sprinkle optional crumb topping if using. Bake at 325°F for 35–40 minutes or until center is just set.
  5. Cool completely, then chill for at least 3 hours before slicing. Garnish with fresh raspberries.

Notes

  • Use room-temperature cream cheese for smoother filling.
  • Chill thoroughly before slicing for clean cuts.
  • Fresh or frozen raspberries work for the swirl.
