2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup brown sugar
16 oz cream cheese (softened)
2/3 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup sour cream
1 1/2 cups fresh or frozen raspberries
2 tbsp sugar
1 tbsp lemon juice
1 tsp cornstarch mixed with 1 tbsp water
Crumb topping (mix 1/4 cup flour, 2 tbsp sugar, and 2 tbsp butter)
Fresh raspberries for garnish
Instructions
Mix graham cracker crumbs, melted butter, and brown sugar. Press into a parchment-lined 9×9” pan and bake at 325°F for 10 minutes.
Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream, and mix until creamy. Pour over the crust.
In a saucepan, cook raspberries, sugar, lemon juice, and cornstarch slurry until thick and jammy. Swirl gently into cheesecake layer using a spoon or knife.
Sprinkle optional crumb topping if using. Bake at 325°F for 35–40 minutes or until center is just set.
Cool completely, then chill for at least 3 hours before slicing. Garnish with fresh raspberries.
Notes
Use room-temperature cream cheese for smoother filling.
