Warm, spiced, and irresistibly cozy pumpkin pie stuffed baked apples, perfect for fall!

Ingredients

  • 4 large firm apples
  • ½ cup pumpkin purée
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ⅛ tsp cloves
  • ⅛ tsp ginger
  • ¼ tsp vanilla extract
  • 1 tbsp heavy cream
  • ¼ cup rolled oats
  • 2 tbsp flour
  • 2 tbsp cold butter
  • 1 tbsp chopped pecans
  • Pinch salt
  • Caramel sauce (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Core apples, hollow centers.
  2. Mix pumpkin purée, sugar, spices, vanilla, cream.
  3. Spoon filling into apples.
  4. Mix oats, flour, butter, salt, pecans to make crumble. Top each apple.
  5. Cover with foil; bake 25 min. Uncover & bake 10–15 min more.
  6. Cool slightly. Drizzle caramel & serve warm.

Notes

  • Choose firm apples to hold shape
  • Chill slightly for easier serving
  • Store leftovers in fridge for 2 days
