- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1 cup pumpkin purée
- 3/4 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 225g cream cheese, softened
- 1/4 cup sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment.
- In a bowl, whisk flour, baking soda, baking powder, salt, and spices.
- In another bowl, mix pumpkin purée, brown sugar, eggs, oil, milk, and vanilla. Combine wet and dry until just blended.
- In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
- Pour half of the pumpkin batter into the pan, spoon over half the cream cheese mixture. Repeat layers. Swirl gently with a knife.
- Bake for 50–60 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Don’t overmix the batter to keep the loaf soft.
- Let the cream cheese come to room temp for easy swirling.
- Wrap tightly and store in fridge for up to 5 days or freeze for longer.
