Moist and spiced pumpkin bread swirled with creamy cream cheese, perfect for fall baking.

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 cup pumpkin purée
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 225g cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment.
  2. In a bowl, whisk flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, mix pumpkin purée, brown sugar, eggs, oil, milk, and vanilla. Combine wet and dry until just blended.
  4. In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
  5. Pour half of the pumpkin batter into the pan, spoon over half the cream cheese mixture. Repeat layers. Swirl gently with a knife.
  6. Bake for 50–60 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Don’t overmix the batter to keep the loaf soft.
  • Let the cream cheese come to room temp for easy swirling.
  • Wrap tightly and store in fridge for up to 5 days or freeze for longer.
