1/2 cup unsalted butter (melted)
3/4 cup brown sugar (packed)
1/4 cup molasses
2 large eggs
1 cup pumpkin purée
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1 tsp baking soda
2 tsp pumpkin pie spice
1/2 tsp ground ginger
1/2 tsp salt
1 cup semi-sweet chocolate chips (plus extra for topping)
Instructions
Mix the Wet Base: In a large bowl, whisk together melted butter, brown sugar, molasses, pumpkin purée, eggs, and vanilla until smooth.
Sift and Combine the Dry Ingredients: In another bowl, whisk together flour, baking soda, pumpkin pie spice, ground ginger, and salt. Add the dry mix to the wet, folding gently.
Add Chocolate & Fold: Gently fold in chocolate chips.
Pour and Bake to Perfection: Spread the batter into a greased 8×8″ or 9×9″ pan. Sprinkle extra chocolate chips on top. Bake at 350°F for 25–30 minutes until set and crackly on top.
Cool, Slice, and Enjoy: Let bars cool completely before slicing into thick, fudgy squares.
