- 1 lb shrimp, peeled and deveined
- 1 lb mussels or clams, cleaned
- 1/2 lb white fish (cod or halibut), cubed
- 1 onion, sliced
- 4 garlic cloves, minced
- 2 medium tomatoes, diced
- 1 red bell pepper, sliced
- 3 tbsp olive oil
- 1 cup dry white wine
- 2 cups seafood or fish broth
- 1 tsp smoked paprika
- 1/2 tsp crushed red pepper flakes (optional)
- 2 bay leaves
- Salt & black pepper to taste
- 1/4 cup fresh parsley, chopped
- Crusty bread, for serving
- In a large pot, heat olive oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened and fragrant.
- Stir in diced tomatoes and cook down for 5 minutes. Add white wine and let simmer for another 3–5 minutes.
- Pour in the seafood broth, bay leaves, smoked paprika, red pepper flakes, salt, and pepper. Bring to a boil, then reduce to simmer.
- Add fish chunks first, simmer for 3 minutes. Then toss in the shrimp and mussels. Cover and cook 5–7 minutes, until shrimp are pink and mussels open.
- Remove bay leaves, stir in chopped parsley, and ladle into bowls. Serve hot with slices of crusty bread.
Notes
- Feel free to adjust the types of seafood based on availability.
- For a spicier kick, increase the amount of crushed red pepper flakes.
- This stew pairs well with a crisp white wine.
