  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels or clams, cleaned
  • 1/2 lb white fish (cod or halibut), cubed
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 2 medium tomatoes, diced
  • 1 red bell pepper, sliced
  • 3 tbsp olive oil
  • 1 cup dry white wine
  • 2 cups seafood or fish broth
  • 1 tsp smoked paprika
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 bay leaves
  • Salt & black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Crusty bread, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, and red bell pepper. Cook until softened and fragrant.
  2. Stir in diced tomatoes and cook down for 5 minutes. Add white wine and let simmer for another 3–5 minutes.
  3. Pour in the seafood broth, bay leaves, smoked paprika, red pepper flakes, salt, and pepper. Bring to a boil, then reduce to simmer.
  4. Add fish chunks first, simmer for 3 minutes. Then toss in the shrimp and mussels. Cover and cook 5–7 minutes, until shrimp are pink and mussels open.
  5. Remove bay leaves, stir in chopped parsley, and ladle into bowls. Serve hot with slices of crusty bread.

Notes

  • Feel free to adjust the types of seafood based on availability.
  • For a spicier kick, increase the amount of crushed red pepper flakes.
  • This stew pairs well with a crisp white wine.
