A fresh, crisp, and vibrant salad featuring pomegranate, pecans, and apples with a tangy balsamic vinaigrette.

Ingredients

  • 5 oz spring mix or baby greens
  • 1/2 cup pomegranate arils
  • 1/3 cup candied pecans
  • 1 red apple, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled goat cheese or blue cheese (optional)
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp pomegranate juice (or more to taste)
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt & pepper to taste

Instructions

  1. In a large bowl, toss together spring mix, apple slices, red onions, and pomegranate seeds.
  2. Whisk together olive oil, balsamic vinegar, pomegranate juice, Dijon mustard, honey, salt, and pepper.
  3. Toast pecans in a dry skillet over medium heat for 3–4 minutes if using raw pecans.
  4. Add pecans and goat cheese to the greens. Pour vinaigrette over and toss gently.
  5. Serve immediately. Add grilled chicken or salmon for extra protein.

Notes

  • Optional: Use candied pecans for extra sweetness.
  • Adjust honey or pomegranate juice to balance sweetness.
  • Best served fresh; dressing can be stored separately.
