A bright, fresh, and zesty Mediterranean-style couscous salad with feta and pomegranate seeds. Perfect for a quick lunch or light meal.

Ingredients

  • 1 cup couscous (uncooked)
  • 1 cup boiling water
  • 1/2 tsp salt
  • 1/2 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup pomegranate seeds
  • 1/3 cup crumbled feta cheese
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped
  • For the Dressing:
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt & pepper to taste

Instructions

  1. In a large bowl, combine couscous, salt, and boiling water. Cover and let sit for 5 minutes. Fluff with a fork.
  2. Add chopped cucumber, red onion, mint, and parsley.
  3. In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper. Drizzle over couscous and mix gently.
  4. Sprinkle in pomegranate seeds and crumbled feta. Gently fold to combine.
  5. Serve immediately or refrigerate for 30 minutes to let flavors blend.

Notes

  • For a vegan version, omit feta or use a dairy-free alternative.
  • Add nuts like almonds or pistachios for extra crunch.
