Ingredients

  • 4 cups arugula or spring mix
  • 1 ripe avocado, sliced
  • 1/3 cup pomegranate seeds
  • 1/4 cup candied or toasted pecans
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1/4 cup olive oil
  • Salt & freshly ground black pepper, to taste

Instructions

  1. Add arugula or spring mix to a large bowl.
  2. Add sliced avocado, pomegranate seeds, pecans, red onions, and feta over the greens.
  3. In a small bowl, whisk lemon juice, red wine vinegar, Dijon, honey, salt, and pepper. Slowly drizzle in olive oil while whisking.
  4. Drizzle vinaigrette over the salad or serve it on the side. Toss lightly if desired.
  5. Garnish with extra pomegranate seeds or pecans and serve immediately.
