2 large apples, peeled, cored, and thinly sliced
1 tbsp lemon juice
1 tbsp sugar
1 cup all-purpose flour
1 tsp baking powder
¼ tsp salt
2 tbsp sugar
½ tsp cinnamon
2 eggs
½ cup milk
¼ cup plain yogurt
1 tsp vanilla extract
Oil or butter (for frying)
Powdered sugar (for dusting)
Instructions
Toss apple slices with lemon juice and 1 tbsp sugar. Let them sit a few minutes to release their natural sweetness and stay bright.
Whisk flour, baking powder, salt, 2 tbsp sugar, and cinnamon in a bowl. In another bowl, whisk eggs, milk, yogurt, and vanilla. Combine wet and dry ingredients until smooth — don’t overmix!
Heat a little butter or oil in a non-stick pan over medium heat. Pour a scoop of batter, gently press apple slices into each pancake. Cook 2–3 minutes per side until golden and fluffy.
Dust with powdered sugar and serve warm with honey, maple syrup, or a dollop of yogurt.
Notes
Use tart apples (like Granny Smith) for a bright flavor.
Add a pinch of nutmeg for extra warmth.
Serve with vanilla ice cream for dessert-style pancakes!
