  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni or diced cooked sausage
  • 1/4 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley (or dried)
  • Optional: pizza sauce for dipping

Instructions

  1. Preheat oven to 375°F and grease a 12-cup muffin tin.
  2. In a bowl, whisk together flour, baking powder, Italian seasoning, garlic powder, and red pepper flakes.
  3. Stir in the egg and milk until combined, then fold in mozzarella, parmesan, and pepperoni.
  4. Divide the batter evenly into muffin cups and bake for 18–22 minutes or until puffed and golden.
