  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped pistachios
  • 1/2 cup dried cranberries (chopped if large)
  • Powdered sugar for dusting

Instructions

  1. Cream the butter and sugar until light and fluffy. Add egg, vanilla, and almond extract.
  2. Stir in flour, baking powder, and salt until just combined.
  3. Roll dough into logs and shape into small rings. Press pistachios and cranberries onto the top.
  4. Bake at 350°F (175°C) for 12–14 minutes until edges are golden.
  5. Cool completely and dust lightly with powdered sugar.
