- Pistachio sponge:
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- Pinch of salt
- ½ cup unsalted butter, softened
- ¾ cup sugar
- 2 large eggs
- ½ cup milk
- ⅓ cup finely ground pistachios
- 1 teaspoon vanilla extract
- Green food coloring (optional)
- Cream layers:
- 250 g mascarpone or cream cheese
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Cherry filling:
- 1½ cups cherries (fresh or frozen, pitted)
- 3 tablespoons sugar
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
- Topping:
- Fresh blueberries
- Chopped pistachios
- Cherry compote or whole cherries
- Preheat oven to 170°C / 340°F. Line a square or round cake pan.
- Cream butter and sugar until fluffy. Add eggs one at a time.
- Mix in milk, vanilla, pistachios and food coloring.
- Fold in dry ingredients gently.
- Bake 30–35 minutes until a toothpick comes out clean. Cool completely.
- Cook cherries with sugar and lemon juice. Stir in cornstarch and simmer until thick. Cool.
- Beat mascarpone with powdered sugar and vanilla.
- Whip cream to soft peaks and fold into mascarpone.
- Slice cake horizontally into layers.
- Layer cake with cream, cherry filling and more cream.
- Finish with a thick cream layer. Top with blueberries, cherries and pistachios.
- Chill at least 3 hours before slicing.
