PISTACHIO BLUEBERRY CHERRY LAYER CAKE

An elegant and fruity pistachio blueberry cherry layer cake that delights every bite with its ultra-moist layers and colorful presentation.

Ingredients

Scale
  • Pistachio sponge:
    • 1½ cups all-purpose flour
    • 1 teaspoon baking powder
    • ¼ teaspoon baking soda
    • Pinch of salt
    • ½ cup unsalted butter, softened
    • ¾ cup sugar
    • 2 large eggs
    • ½ cup milk
    • ⅓ cup finely ground pistachios
    • 1 teaspoon vanilla extract
    • Green food coloring (optional)
  • Cream layers:
    • 250 g mascarpone or cream cheese
    • 1 cup heavy whipping cream
    • ½ cup powdered sugar
    • 1 teaspoon vanilla extract
  • Cherry filling:
    • 1½ cups cherries (fresh or frozen, pitted)
    • 3 tablespoons sugar
    • 1 teaspoon lemon juice
    • 1 teaspoon cornstarch
  • Topping:
    • Fresh blueberries
    • Chopped pistachios
    • Cherry compote or whole cherries

Instructions

  1. Preheat oven to 170°C / 340°F. Line a square or round cake pan.
  2. Cream butter and sugar until fluffy. Add eggs one at a time.
  3. Mix in milk, vanilla, pistachios and food coloring.
  4. Fold in dry ingredients gently.
  5. Bake 30–35 minutes until a toothpick comes out clean. Cool completely.
  6. Cook cherries with sugar and lemon juice. Stir in cornstarch and simmer until thick. Cool.
  7. Beat mascarpone with powdered sugar and vanilla.
  8. Whip cream to soft peaks and fold into mascarpone.
  9. Slice cake horizontally into layers.
  10. Layer cake with cream, cherry filling and more cream.
  11. Finish with a thick cream layer. Top with blueberries, cherries and pistachios.
  12. Chill at least 3 hours before slicing.
