  • 1 lb ribeye steak, thinly sliced
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small red onion, sliced
  • 1 green bell pepper, sliced
  • 1/2 red bell pepper, sliced
  • 4 hoagie rolls
  • 1 ½ cups shredded provolone or mozzarella
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Season thinly sliced steak with salt, pepper, and garlic powder.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add steak in a single layer and sear quickly (2–3 minutes), stirring until browned but still juicy. Remove and set aside.
  4. In the same pan, sauté onions and bell peppers until tender and slightly caramelized.
  5. Return steak to the skillet and toss with vegetables.
  6. Lower heat and sprinkle shredded cheese generously over the mixture. Cover briefly until cheese melts and bubbles.
  7. Slice hoagie rolls and lightly toast if desired.
  8. Spoon cheesy steak mixture into rolls and sprinkle with parsley.

Notes

  • Freeze steak 20 minutes before slicing for thin cuts.
  • Don’t overcook the beef — it cooks fast.
  • Use fresh, soft hoagie rolls for best texture.
