A delicious and cheesy Pepperoni Sourdough Bread that combines the flavors of pizza with the texture of artisan bread.

Ingredients

  • 500g bread flour
  • 100g active sourdough starter
  • 350g warm water
  • 10g salt
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1215 slices pepperoni
  • 1 tsp Italian seasoning
  • Olive oil for brushing

Instructions

  1. Mix the Dough: Combine bread flour, warm water, and sourdough starter. Mix until shaggy, let rest 30 mins.
  2. Add Salt & Stretch: Mix in salt and begin stretch-and-folds every 30 minutes for 2 hours.
  3. Add the Good Stuff: Gently fold in shredded mozzarella, Parmesan, and Italian seasoning. Top with pepperoni slices.
  4. Cold Ferment Overnight: Transfer to a floured banneton or bowl. Cover and refrigerate overnight.
  5. Bake Till Golden & Gooey: Preheat Dutch oven to 475°F. Score the dough, top with extra cheese and pepperoni, and bake 20 min covered, 20 min uncovered.
