500g bread flour
100g active sourdough starter
350g warm water
10g salt
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
12–15 slices pepperoni
1 tsp Italian seasoning
Olive oil for brushing
Instructions
Mix the Dough: Combine bread flour, warm water, and sourdough starter. Mix until shaggy, let rest 30 mins.
Add Salt & Stretch: Mix in salt and begin stretch-and-folds every 30 minutes for 2 hours.
Add the Good Stuff: Gently fold in shredded mozzarella, Parmesan, and Italian seasoning. Top with pepperoni slices.
Cold Ferment Overnight: Transfer to a floured banneton or bowl. Cover and refrigerate overnight.
Bake Till Golden & Gooey: Preheat Dutch oven to 475°F. Score the dough, top with extra cheese and pepperoni, and bake 20 min covered, 20 min uncovered.
Notes
For best results, use a kitchen scale for measuring ingredients.
Let the bread cool before slicing for better texture.
