Delicious Peppermint Sugar Cookie Sandwiches that are soft, creamy, and perfect for the holiday season.

Ingredients

  • Soft sugar cookies (buttery dough, vanilla, almond, milk)
  • Peppermint frosting (butter + powdered sugar + peppermint)
  • Crushed candy canes for rolling

Instructions

  1. Whisk flour, baking soda, baking powder. Beat butter + sugar until fluffy, add egg + extracts. Add dry ingredients and milk.
  2. Roll dough into balls, flatten slightly, and bake 8–10 minutes at 350°F (175°C). Cool completely.
  3. Beat butter + powdered sugar, add peppermint extract + cream. Fold in crushed candy canes.
  4. Pipe or spread frosting on one cookie, sandwich with another, and roll edges in more crushed candy canes. Chill 10–15 minutes.

Notes

  • Add white chocolate chips to the dough for extra richness
