  • 1 cup brown sugar
  • 2 large eggs
  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • ½ cup brown sugar
  • 4 tablespoons unsalted butter
  • ¼ cup heavy cream
  • 1 cup whole pecans

Instructions

  1. Preheat oven to 180°C (350°F). Grease and line a round cake pan.
  2. Cream butter and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla.
  4. Whisk flour, baking powder, and salt. Add to batter alternately with milk.
  5. Fold in chopped pecans gently.
  6. Spread batter evenly in the pan and bake 35–40 minutes until a toothpick comes out clean.
  7. Meanwhile, make caramel: simmer butter, brown sugar, and cream for 3–4 minutes until glossy.
  8. Pour warm caramel over the cake and scatter whole pecans on top. Let set slightly before slicing.
