A buttery, nutty, and fruity Pear & Almond Tart that’s elegantly rustic and perfect for any occasion.

Ingredients

  • 1 ¼ cups flour
  • ½ cup cold butter, diced
  • ¼ cup powdered sugar
  • 1 egg yolk
  • 12 tbsp cold water
  • ½ cup softened butter
  • ½ cup sugar
  • 1 egg
  • ¾ cup almond meal
  • 1 tbsp flour
  • ½ tsp vanilla
  • 3 pears, peeled and sliced
  • 1 tbsp lemon juice
  • 2 tbsp apricot jam (for glaze)
  • Powdered sugar for finish

Instructions

  1. Rub butter into flour/sugar, mix yolk and water to form dough. Chill 30 mins, roll and press into tart pan. Chill again.
  2. Cream butter and sugar, add egg, almond meal, flour, vanilla. Spread over crust.
  3. Toss pears in lemon juice, fan across filling. Bake at 175°C for 45 mins.
  4. Cool. Brush with warm jam. Dust with sugar.

Notes

  • Dollop of whipped cream or vanilla yogurt on the side is a great serving suggestion.
  • Pair with chamomile or almond milk latte.
  • Coconut oil + almond flour makes it dairy & gluten free.
  • Swap pears for apples or stone fruit seasonally.
