3 cups ripe peaches, peeled and finely diced
1/2 cup red bell pepper, finely diced
1/2 cup green bell pepper, finely diced
1 small jalapeño, finely minced (optional for extra heat)
1/4 cup apple cider vinegar
1 tbsp lemon juice
3 cups granulated sugar
1 packet (1.75 oz) powdered fruit pectin
1 tsp sesame seeds (optional for topping)
Fresh chopped parsley or cilantro (optional for garnish)
Instructions
In a large pot, combine peaches, red and green bell peppers, jalapeño, apple cider vinegar, and lemon juice. Simmer for 5–7 minutes until it’s all soft, juicy, and full of color pop.
Stir in the fruit pectin and bring to a boil over high heat.
Add the sugar all at once and stir constantly. Bring the mixture to a rolling boil for 1–2 minutes, then remove from heat.
Pour the hot jelly into sterilized jars or glass containers to cool.
Spread over cream cheese and toast, drizzle on grilled meats, or spoon it onto a cracker with goat cheese.
Notes
Optional jalapeño can be adjusted based on desired spice level.
Use sterilized jars for canning to ensure shelf stability.
