Delicious jumbo caramel peach cobbler muffins that are sweet, gooey, and perfect for breakfast or dessert.

  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2/3 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 ½ tsp vanilla extract
  • 1 ½ cups fresh or canned peaches, chopped
  • 1/3 cup thick caramel sauce (plus extra for drizzling)

Instructions

  1. In a large bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
  2. In another bowl, mix both sugars, eggs, sour cream, milk, butter, and vanilla.
  3. Add wet to dry, mixing gently. Fold in chopped peaches and swirl in caramel.
  4. Scoop batter into jumbo muffin liners, filling nearly to the top.
  5. Bake at 375°F (190°C) for 22–26 minutes, until golden and a toothpick comes out clean. Drizzle with warm caramel.

Notes

  • For extra flavor, consider adding a pinch of nutmeg.
  • These muffins can be stored in an airtight container for up to 3 days.
