Ingredients

  • 2 beef steaks (ribeye or sirloin)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 250 g mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh thyme (or ½ tsp dried)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Remove steaks from the fridge 20 minutes before cooking. Season generously with salt and pepper.
  2. Heat olive oil in a heavy skillet over medium-high heat.
  3. Sear steaks 3–4 minutes per side until a deep golden crust forms. Add butter and baste for extra flavor. Remove steaks and rest.
  4. In the same pan, add mushrooms and cook until browned and glossy.
  5. Stir in garlic and thyme; cook 30 seconds until fragrant.
  6. Pour in beef broth and Worcestershire sauce. Simmer 4–5 minutes until slightly thickened.
  7. Return steaks to the pan briefly to warm and coat with sauce.
  8. Garnish with parsley and serve immediately.

Notes

  • Let steaks rest before slicing for maximum juiciness.
  • Don’t overcrowd mushrooms — browning = flavor.
  • Deglaze the pan well for a richer gravy.
