Pan-Seared Salmon in Creamy Spinach Sauce

Crispy, creamy, buttery and irresistibly wholesome Pan-Seared Salmon in Creamy Spinach Sauce.

Ingredients

  • 2 salmon fillets, skin-on
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup baby spinach
  • 1/2 cup coconut cream or heavy cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 cups baby potatoes, boiled
  • 1 teaspoon olive oil
  • Chopped parsley for garnish

Instructions

  1. Season salmon fillets with salt and pepper.
  2. In a skillet, heat olive oil and butter over medium-high heat. Place salmon skin-side down and sear for 4–5 minutes. Flip and cook another 2–3 minutes until done. Remove and keep warm.
  3. In the same pan, add garlic and cook for 1 minute. Stir in spinach and sauté until wilted.
  4. Pour in cream, mustard, lemon juice, salt and pepper. Simmer for 2–3 minutes until slightly thickened.
  5. Return salmon to the pan and spoon sauce over it.
  6. Serve with boiled baby potatoes drizzled with olive oil and topped with parsley.

Notes

  • Pat salmon dry before searing for crispier skin.
  • Don’t overcrowd the pan—sear in batches if needed.
  • Add a touch of chili flakes to the cream for subtle heat.
