  • 4 whole chicken legs (thigh + drumstick)
  • 2 tablespoons olive oil
  • 1 tablespoon melted butter
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 200°C (400°F). Pat chicken legs completely dry with paper towels.
  2. In a small bowl, mix olive oil, melted butter, garlic, thyme, oregano, paprika, garlic powder, salt, and pepper.
  3. Rub seasoning mixture all over the chicken, making sure to coat under the skin for extra flavor.
  4. Place chicken legs skin-side up in a baking dish.
  5. Roast for 40–45 minutes, or until internal temperature reaches 75°C (165°F) and skin is deeply golden and crispy.
  6. For extra crispiness, broil 2–3 minutes at the end.
  7. Rest 5–10 minutes before serving. Garnish with fresh parsley.
