A silky and glossy orange mousse dome dessert bursting with citrus brightness, perfect for any occasion.

Ingredients

  • 150g digestive biscuits, crushed
  • 75g unsalted butter, melted
  • 250g cream cheese, softened
  • 200ml heavy cream, whipped
  • 80g sugar
  • 2 tsp vanilla extract
  • 1 tbsp orange zest
  • 100ml fresh orange juice
  • 1 tbsp gelatin powder
  • 2 tbsp cold water
  • 100ml orange jelly glaze
  • Orange segment and leaf for garnish

Instructions

  1. Prepare the base: Combine crushed biscuits with melted butter and press into the bottom of silicone dome molds or pastry rings. Chill to set.
  2. Make the mousse: Bloom gelatin in cold water for 5 minutes. Beat cream cheese, sugar, vanilla, and zest until smooth. Melt gelatin and mix with orange juice, then fold into the cream cheese mixture. Gently fold in whipped cream until smooth and airy. Pour mousse into molds and freeze for at least 3 hours.
  3. Glaze the domes: Warm orange jelly glaze until pourable. Unmold the frozen domes and place on a wire rack. Pour glaze evenly to coat each dome.
  4. Finish and serve: Set on biscuit bases, garnish with an orange slice and leaf. Serve chilled for the perfect citrus delight.
