A cheesy, bold, and bursting with taco flavor one-pot meal that combines mac and cheese with taco seasoning for a delicious family dinner.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 lb ground beef or chicken
  • 2 garlic cloves, minced
  • 1 packet taco seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups beef or chicken broth
  • 1 cup milk
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups uncooked pasta shells
  • 2 cups shredded cheddar cheese
  • Fresh cilantro or green onions for garnish

Instructions

  1. Heat olive oil over medium heat. Add onion and cook for 2–3 minutes. Add ground beef or chicken and cook until browned. Stir in garlic, taco seasoning, paprika, salt, and pepper.
  2. Pour in broth, milk, and diced tomatoes with chilies. Add uncooked pasta. Bring to a boil, then reduce heat and cover. Simmer 12–15 minutes, stirring occasionally, until pasta is tender.
  3. Stir in 1½ cups cheddar until melted and creamy. Sprinkle the rest on top, cover, and melt for 2–3 minutes.
  4. Garnish with cilantro or green onions and serve hot.

Notes

  • Try pepper jack cheese for extra spice.
  • Substitute ground turkey for a lighter version.
