  • 1 lb ground beef
  • 2 cups elbow macaroni
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 bay leaf
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Optional: shredded cheddar cheese for topping

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
  2. Add onion, bell pepper, and garlic to the pot. Cook until softened and fragrant.
  3. Stir in tomato sauce, diced tomatoes, beef broth, Italian seasoning, paprika, and bay leaf. Bring to a gentle boil.
  4. Stir in the elbow macaroni directly into the pot. Reduce heat and simmer uncovered for 12–15 minutes, stirring occasionally, until pasta is tender and the sauce thickens.
  5. Remove the bay leaf. Taste and adjust seasoning. Sprinkle shredded cheddar on top if desired. Serve hot.

Notes

  • For a spicier version, add red pepper flakes.
  • Leftovers store well in the fridge for up to 3 days.
  • Freeze portions for quick meals later.
