- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 500g ground beef
- 3 cups beef broth
- 2 cups water
- 1 can diced tomatoes
- 2 potatoes, diced
- 2 carrots, sliced
- 1 cup corn
- 1 cup peas
- 1 cup green beans
- Salt, pepper, thyme, paprika, and 1 bay leaf
- Brown the beef: Cook onion and garlic in oil, add beef, and brown well.
- Add liquids and base veggies: Add broth, water, tomatoes, potatoes, carrots, and spices. Boil, then simmer 25–30 mins.
- Add remaining veggies: Stir in corn, peas, and green beans. Simmer another 10 mins.
- Serve: Discard bay leaf and ladle into bowls. Serve warm.
