1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1/2 tsp salt
1 tsp baking powder
1 cup sweetened shredded coconut
1 1/2 cups chopped pecans or walnuts
1 1/2 cups maraschino cherries, halved
Powdered sugar, for dusting
Instructions
Beat softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well, then stir in vanilla.
In a separate bowl, whisk together flour, salt, and baking powder. Slowly mix into the wet batter.
Fold in coconut, nuts, and halved maraschino cherries.
Spread the batter into a greased 9×13″ pan and smooth it out evenly. Bake at 350°F (175°C) for 30–35 minutes, or until golden and a toothpick comes out clean.
Let cool completely, then dust generously with powdered sugar.
Notes
Store in an airtight container for up to 3 days.
For a nut-free version, omit the pecans or walnuts.
