A lusciously creamy, no-bake vanilla cheesecake topped with honey glaze, fresh figs, and berries, perfect for summer desserts.

Ingredients

  • 200g digestive biscuits or graham crackers
  • 80g melted butter
  • 400g cream cheese, room temperature
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey (warm slightly for easy pouring)
  • Fresh figs, halved
  • Fresh raspberries
  • Fresh blueberries
  • Edible flowers or mint (optional for garnish)

Instructions

  1. Crush biscuits into fine crumbs and mix with melted butter. Press into the base of a springform pan. Chill for 15 minutes.
  2. In a large bowl, beat cream cheese, powdered sugar, lemon juice, and vanilla until smooth.
  3. In a separate bowl, whip cream until soft peaks form, then fold gently into the cream cheese mixture.
  4. Pour filling over crust, smooth the top and chill for at least 6 hours or overnight.
  5. Before serving, top with honey, figs, berries, and optional flowers or mint.

  • Serve straight from the fridge for best texture
  • Add crushed pistachios or almond flakes for crunch
  • Perfect with a cup of floral herbal tea or espresso
  • Make sure cream cheese is at room temp for easy mixing
