MOROCCAN CHICKEN TAGINE WITH APRICOTS & TOASTED ALMONDS

A comforting and aromatic Moroccan chicken dish with apricots and toasted almonds, perfect for a cozy meal.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 large onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 cup dried apricots
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ¼ tsp black pepper
  • ½ tsp ground ginger
  • 1 cup chicken broth
  • Salt to taste
  • ¼ cup slivered almonds, toasted
  • Chopped fresh parsley or cilantro, for garnish

Instructions

  1. Heat olive oil in a deep skillet or tagine over medium heat. Sear chicken thighs until golden on both sides, then set aside.
  2. In the same pan, add onions and cook until softened. Add garlic and all the spices, stirring until fragrant.
  3. Return the chicken to the pan. Add dried apricots and pour in the broth. Season with salt.
  4. Cover and simmer on low for 35–40 minutes, until chicken is tender and sauce is thickened.
  5. Top with toasted almonds and chopped herbs just before serving.

  • Pair with fluffy couscous, quinoa, or warm flatbread.
  • Add a side of herbed yogurt or cucumber salad for freshness.
