- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ground ginger
- 1 cup pumpkin purée (not pumpkin pie mix)
- 2 large eggs
- ½ cup vegetable oil
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup chopped walnuts (plus more for topping)
- ¼ cup pumpkin seeds (pepitas) for garnish
- Mix the dry ingredients in a large bowl: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In another bowl, whisk pumpkin purée, eggs, oil, sugars, and vanilla until smooth.
- Combine dry ingredients into wet and stir just until mixed. Fold in walnuts.
- Pour batter into a greased loaf pan and top with extra walnuts and pumpkin seeds.
- Bake at 350°F (175°C) for 50–60 minutes until a toothpick comes out clean. Cool before slicing.
Notes
- Use pure pumpkin purée, not pumpkin pie mix.
- Do not overmix the batter for a tender crumb.
- Cool completely before slicing for clean cuts.
