- 4 large eggs
- 1 cup milk (whole or 2%)
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, sliced
- 1/2 cup broccoli florets, lightly steamed
- 1/4 cup red onion, thinly sliced
- 1/4 cup corn kernels
- 1/4 cup green peas (frozen or fresh)
- 1/4 cup zucchini, thinly sliced
- 1 tsp dried Italian herbs
- Salt and black pepper to taste
- Olive oil (optional, for brushing crust)
- Roll out your pie crust into a tart pan and lightly prick the base with a fork. Chill in the fridge while prepping the filling.
- In a bowl, whisk together the eggs, milk, salt, and pepper until smooth.
- Layer broccoli, red onion, zucchini, corn, and peas into the crust. Sprinkle both cheeses evenly.
- Pour the egg mixture over the veggies and cheese. Arrange sliced tomatoes neatly on top.
- Bake at 375°F (190°C) for 35–40 minutes, or until the center is set and the top is golden. Let cool slightly before serving.
