  • 2 cups crushed chocolate cookies or biscuits
  • 1/2 cup unsalted butter, melted
  • 250g cream cheese, softened
  • 1 1/2 cups heavy cream
  • 3/4 cup powdered sugar
  • 1/2 tsp peppermint extract
  • A few drops of green food coloring (optional)
  • 150g dark chocolate, chopped
  • 1/2 cup heavy cream (for ganache)
  • 1/2 cup crushed pistachios (for garnish)
  • Shaved dark chocolate or chocolate curls (for garnish)

Instructions

  1. Mix the crushed chocolate cookies with melted butter and press firmly into the bottom of a springform pan. Chill in the fridge for 15–20 minutes.
  2. In a mixing bowl, beat cream cheese until smooth. Add powdered sugar, peppermint extract, and a few drops of green coloring. Mix until creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Fold it gently into the cream cheese mixture.
  4. Spread the mint filling over the chilled crust evenly. Smooth the top and refrigerate for at least 4 hours (or overnight for best results).
  5. For the ganache, heat the cream until just steaming, then pour over chopped chocolate. Let sit for a minute, then stir until smooth.
  6. Pour the ganache over the chilled cake and gently spread. Top with crushed pistachios and chocolate shavings. Chill until ganache is set.
