1 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup unsalted butter, softened
1/2 cup milk
1 egg
1 teaspoon baking powder
1/2 teaspoon vanilla extract
Pinch of salt
1 cup fresh strawberries, hulled and chopped
1/2 cup heavy cream
2 tablespoons powdered sugar
Whipped cream for topping
Fresh strawberries, halved (for garnish)
Instructions
Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
In a bowl, beat together butter and sugar until light and fluffy. Add egg and vanilla, mix well.
Sift in flour, baking powder, and salt. Add milk and mix until smooth.
Spoon batter into muffin tins, filling 3/4 full. Bake 12–15 minutes or until golden and springy. Let cool.
In a separate bowl, mash strawberries and whip with heavy cream and powdered sugar until light and fluffy.
Slice the tops off cooled mini cakes, pipe or spoon strawberry mousse over each, then top with whipped cream and half a fresh strawberry.
Chill for 20 minutes before serving for the perfect bite.
Notes
Make mousse in advance and chill for even firmer texture.
Use cake flour for a more delicate crumb.
Swap with coconut whipped cream for a dairy-free version.
