1½ cups graham cracker crumbs
¼ cup sugar
⅓ cup melted butter
2 (8 oz) blocks cream cheese
⅔ cup sugar
2 eggs
½ cup sour cream
1 tsp vanilla
1 tbsp cornstarch
Pinch of salt
Powdered sugar
White chocolate truffles (for snowmen)
Chocolate chips, orange candies, and buttons (for decorating)
Instructions
Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into lined muffin tins. Bake at 325°F (165°C) for 6 minutes. Cool slightly.
Prepare the filling: Beat cream cheese and sugar until smooth. Mix in eggs one at a time. Add sour cream, vanilla, salt, and cornstarch. Spoon cheesecake batter over crusts.
Bake: Bake 18–20 minutes until just set. Turn off oven, crack door, and cool inside. Then chill 2 hours or overnight.
Decorate: Dust tops with powdered sugar. Place white chocolate truffles on each as “snowmen.” Use chocolate chips for eyes and buttons, orange candy for the carrot nose, and chocolate pieces for hats.
Notes
Don’t overbake; center should still jiggle slightly.
