Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 tsp salt
  • 24 tbsp ice water
  • 2/3 cup packed brown sugar
  • 1/2 cup golden syrup
  • 2 eggs
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup pecan halves

Instructions

  1. Mix flour and salt in a bowl. Cut in butter until crumbly. Add water gradually until dough forms. Shape into disk, wrap and chill for 30 minutes.
  2. Preheat oven to 350°F (175°C). Roll out dough and cut circles to fit mini tart pans. Press into pans and chill for 15 minutes more.
  3. Whisk brown sugar, syrup, eggs, butter, and vanilla until smooth. Place pecans in each crust, pour in filling, and top with more pecans.
  4. Bake for 25–30 minutes until set and golden. Cool before removing from pans.

Notes

  • Dust lightly with powdered sugar or serve with whipped cream.
  • Use maple syrup as an alternative for deeper flavor.
  • Freeze unbaked tart shells for future batches.
