Mini Cheesecake Strawberry Delights are velvety and creamy bite-sized desserts topped with fresh strawberries and strawberry jam, perfect for any occasion.

Ingredients

  • 200g graham crackers
  • 80g unsalted butter
  • 450g cream cheese
  • 120g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 100ml sour cream
  • 250ml heavy cream
  • 100g cream cheese
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries
  • Strawberry jam
  • Crushed biscuits

Instructions

  1. Base: Mix crushed crackers with melted butter. Press into muffin tins and bake at 160°C (320°F) for 5–7 minutes. Cool.
  2. Cheesecake: Beat cream cheese and sugar. Add eggs, vanilla, and sour cream. Pour over base and bake for 18–20 minutes. Cool and chill for 4 hours.
  3. Topping: Whip cream, cream cheese, sugar, and vanilla. Pipe over cheesecakes, top with strawberries, drizzle jam, and sprinkle crumbs.

Notes

  • Use gluten-free biscuits if needed.
  • Don’t overbake — they’ll firm up when cooled.
  • Chill overnight for best texture.
